Health Tips - Chocolate Sorbet

None of the ingredients in this recipe are heated, so the nutrient levels are excellent. It is very high in calcium, fiber, potassium, phosphorus, and magnesium; also high in manganese, sodium and vitamins A, B-1, B-2, and C. This recipe makes about 36 ounces of nutritious sorbet or 3 servings with 98 calories and only 1/2 gram fat in each serving!

Ingredients

  • the water from 1 freshly-opened young coconut (about 1 1/2 cups)
  • 1 1/2 tablespoons raw cacao powder
  • 2 organic dates, pitted
  • 1/2 teaspoon stevia extract
  • 1 1/2 cups ice (quantity about equal to the water that comes out of the coconut)

If you want a creamy richness and don't mind fat calories, add a handful of raw nuts and a bit more sweetener.

Blend in a Vita-mix until smooth and eat immediately!
