Pepi's Low Carb Pesto

The recipe makes about 3/4 cup pesto sauce. Serve on top of fish, turkey burgers, pasta, salad, tomatoes, crackers, pizza, etc. It can be used for 2 servings containing about 250 calories, 5 grams of protein and 5 grams of carbs each.

Put these ingredients in your Vita-Mix or food processor:

  • 1/2 cup packed-down organic basil
  • 2 cup packed-down organic spinach
  • 1/3 cup raw organic pine nuts. Other raw nuts can be used, but have higher carb levels.
  • 1/4 cup water
  • 1/2 teaspoon sea salt
  • 2 - 4 cloves garlic
  • Optional: 1 tablespoon organic olive oil, which adds 120 calories to the recipe.

Blend the ingredients until the pesto is the consistency you prefer.
