None of the ingredients in this recipe are heated, so the nutrient levels are excellent. It is very high in calcium, fiber, potassium, phosphorus, and magnesium; also high in manganese, sodium and vitamins A, B-1, B-2, and C. This recipe makes about 36 ounces of nutritious sorbet or 3 servings with 98 calories and only 1/2 gram fat in each serving!

  • the water from 1 freshly-opened young coconut (about 1 1/2 cups)
  • 1 1/2 tablespoons raw cacao powder
  • 2 organic dates, pitted
  • 1/2 teaspoon stevia extract
  • 1 1/2 cups ice (quantity about equal to the water that comes out of the coconut)

If you have never opened a coconut before, watch this video about how to go about it. Or, read Coconut Sources to find out where to get them with the least fuss and in the healthiest form.

If you want a creamy richness and don’t mind fat calories, add a handful of raw nuts and a bit more sweetener.
