Raw Ice Cream

Ingredients

3/4 cup raw milk (liquid) — non-fat is fine
2 1/3 cups raw milk cubes (frozen)
1/8 teaspoon stevia extract
2 tablespoons unheated honey
2" vanilla bean or 2 tsp. vanilla extract

Recipe

  • Freeze 2 1/3 cups raw milk in an ice cube tray.
  • Blend 3⁄4 cup liquid raw milk, 2 tablespoons unheated honey, and vanilla bean on high until vanilla bean is in fine particles. Works best in a Vita-mix blender.
  • Add raw milk ice cubes and blend on "10" of the "variable" setting, pushing cubes down into the blades as necessary until smooth.
  • Add stevia and mix on "7" of the variable range setting until mixed in.

Calories: This makes approximately four 75 calorie servings.  If you add 1 tablespoon raw carob or raw unsweetened cocoa powder, this increases the calories per serving to over 85 calories.  Try fresh strawberries on top!

If you want a creamier, richer, but higher-calorie ice cream, add raw nuts to this recipe.

Note:This recipe was designed to be low in sugar. For additional sweetness you can increase stevia to taste.  However, if you add much more you can get a stevia aftertaste.
